This episode I drink a tea I originally featured about 5 years ago on the show, the 2009 Yongde Daxueshan. Now that tea is 11 years old and it is an interesting revisit to test both the tea and my storage.

  1. Somewhat related to concepts discussed here, I have a couple short term storage questions for you. I also live in the PNW (hot dry summers, cool wet winters), but I am not really looking to set up any aging experiments. But I do want to keep them in good condition. Do you have recommendations about storing cakes and other teas for the short term? Even if you own just a handful of cakes, it can take a year or two to get through one if you’re not drinking it daily. Right now, I keep them in sealed ziplocks in their own cupboard not too near any heat sources in my kitchen. Like I said, I don’t have any real aging goals. I’m just trying to keep them from going “bad” over the ~2 years it might take to drink one. Are there any other precautions that the slightly more casual cake owner should be taking?
