I’ve had this happen with some of my ripes as well, particularly Dayi. I think some of them are just better young and do not age particularly well.
I recently acquired a much newer pressing via an impulse buy from the Taetea store on Amazon. It arrived dessicated, generating 45% RH in a mylar bag. I tasted it once and put it away to revive.
My intention in buying it was basically to prove to myself that you could get a similar experience from a $40-50 gongting cake without the Dayi name premium. I have hope that it wasn’t dried out too long: that Amazon store seems to have pretty rapid product turnover.
